SALLY'S OATMEAL MUFFINS 
 
1 CUP ROLLED OATS  
 
1 CUP SOY MILK 
 
1 SERVING EGG REPLACER  
 
1/3 CUP BROWN SUGAR 
 
1/2 CUP OIL 
 
1/2 CUP WHEAT GERM 
 
1/2 CUP WHOLE WHEAT FLOUR 
 
1/2 TSP. BAKING SODA 
 
1/2 TSP. BAKING POWDER 
 
1/2 TSP. SALT 
 
COMBINE OATMEAL AND MILK. ADD BEATEN EGG - MIX WELL. ADD 
SUGAR & OIL - MIX WELL. COMBINE DRY INGREDIENTS & ADD TO 
OATMEAL MIXTURE, STIRRING ONLY ENOUGH TO DAMPEN. FILL 
MUFFIN TINS WELL OR USE PAPER MUFFIN CUPS TO LINE TINS. 
BAKE AT 400 DEGREES FOR 20 MINUTES FOR 12 LARGE MUFFINS OR 
10-12 MINUTES FOR 3 DOZEN MIN--MUFFINS. 
 
 
THIS IS THE BASIC RECIPE WHICH IS DELICIOUS HOWEVER, USE 
YOUR IMAGINATION. INSTEAD OF MILK USE YOGURT OR KEFIR. USE 
OTHER GRAINS AS WELL AS BASIC RECIPE + SIMPLY INCREASE 
LIQUID TO GET THE RIGHT CONSISTENCY. ADD NUTS, RAISINS, 
DRIED FRUIT OF ANY KIND, BANANA, CHOCOLATE CHIPS, SPRINKLE 
COCONUT ON TOP, VARY SPICES (NUTMEG, CINNAMON, CARDAMOM., 
GRATED LEMON RIND, ETC.
